Is that a temp sensor fitted above No.3?
I'd change the adaptor if I were you. You want the probe in the gallery so that the oil flows over it. Not in a dead end like it is. That'll be in a little pocket of air so you won't get a true reading...
Just a thought like.
Apart from that it looks gorgeous!

The probe was really long and we could not get a shorter one with the gauge we wanted to use, so we had the adpter made, the probe is inside quite a distance. Thanks for mentioning it, I will check again.

Blew it up at snetterton, run the fuel too low - my stupidity really.
This should be 650-700 ish - GT4088 + Nos+8 injectors
Not sure if EA will let me back
