Without meaning to sound like a *****, if you are asking about which to buy your prob not the man to be mapping it.
I am by no means an expert , but SimTek and Autronics seem very popular, but as with a lot of things its as much the man on the computer that make the difference as the software itself.

If you are interested in the DIY approch , look into the OpenECU end of things , very interesting even for just information purposes and if you do go that route it will be a lot more cost effective than an aftermarket ECU
